Mexican Roll Ups Appetizer

This is an easy recipe to take to a get-together last-minute. Usually I have these ingredients on hand.

Aunt Patti’s Mexican Roll Ups

  • (1) 8 oz cream cheese
  • 2-3 tablespoons picante sauce (salsa)
  • black olives, chopped (1 small can) I often omit this
  • big flour tortillas (3-5)

Directions: Cream the cheese with salsa. Add chopped olives. Spread 3-4 tablespoons of mixture on tortilla. Roll tortillas up tightly. Refrigerate for couple of hours. Cut into small, round slices and serve with picante.

Quite addictive! I’ve made these for homeschool moms meetings so many times I can’t count. This weekend they are the appetizer for a bridesmaids luncheon.

Easy and universally loved.

About Hodgepodgemom

Tricia faces a daily dose of chaos homeschooling five children – preschoolers to high schoolers. The biggest lesson she’s learned? At the end of the day – when the dishes are put away and the children are tucked in bed – truly what matters is each child’s relationship with the Lord. Raising children is a God-given privilege and, folks, the time is short.
