Pickled Peach Salad

We enjoyed this pickled peach salad on Easter Sunday at my Aunt Patti’s house. Of course I asked for the recipe! She says, “It is so easy!”

It is 2 small packages (or one large one) of lemon jello. Add 2 cups boiling water and stir for 2 minutes. Add one cup of the juice from the jar of Pickled/spiced peaches and one cup cool water. Cut up the peaches into smaller bites and add to the liquid.

It is that easy!!! Just peaches ,water, and jello. Enjoy.

  3. Tricia, I normally shop at Publix (also Fresh Market for special things)…..have you gotten them there before??

    This is such a simple recipe. I recall my mother in law making this. She passed away seven years ago, but I love it when I can pull off some good southern cooking for my sweet father in law. :-) I am not from the south, and Midwestern cooking is what I was raised on!

    • Aw, Mary! You know, it’s sometimes just these simple things that can show love. Even a pickled peach salad. The name brand is Margaret Holmes and I am sure you can find it on the shelves around here – likely Publix, Kroger and Walmart all carry it because it is a southern brand. Let me know how your father-in-law (and everyone else) likes it!
