Spinach and Fruit Salad: Arthritis Friendly Living

Print Friendly

This salad is so simple. Just get your favorite bag of spinach. Top with any or all of the following:

  • shredded mozzarella
  • chopped fruit (apple, strawberry, mandarin oranges)
  • nuts (we use sunflower seeds to keep allergic children safe), avocado, your favorites!
  • Dressing (we use Italian)

I made this real quick for lunch after church. I chopped extra slices of apple for those that haven’t quite outgrown a spinach aversion.

Thanks to Nana for teaching us to enjoy this yummy salad! *An update from the archives in hopes I can get back on track in my eating after busy weeks.

About Hodgepodgemom

Tricia faces a daily dose of chaos homeschooling five children – preschoolers to high schoolers. The biggest lesson she’s learned? At the end of the day – when the dishes are put away and the children are tucked in bed – truly what matters is each child’s relationship with the Lord. Raising children is a God-given privilege and, folks, the time is short.

  2. This sounds delicious! I am gluten/dairy free, so a new twist on safe ingredients is always welcome! Thanks for sharing. :-)
