Fast Food for Slow Sundays: Nana’s Chicken and Dumplings

: Nana’s Chicken and Dumplings

  1. 1 hen (3-5 lbs)
  2. boiling, salted water
  3. 2 cups self-rising flour
  4. 1/4 cup shortening
  5. 3/4 cup boiling water
  6. salt and pepper to taste

  1. Cook hen in boiling water until tender.
  2. Remove from broth.
  3. Cool chicken.
  4. Cut from bone, set aside.
  5. Measure 1 quart of broth into large saucepan.
  6. Bring to boil.
  7. Add chicken.
  8. Put flour in bowl.
  9. Cut in shortening with pastry blender or forks.
  10. Add boiling water, a small amount at a time.
  11. Shape mixture into ball and roll out on floured aluminum foil.
  12. Cut into strips.
  13. Drop into boiling broth.
  14. Cover and cook for about 8-10 minutes.

This is cheap eats! With green beans and biscuits – makes enough for a couple of meals.

Make it on Saturday to enjoy on Sunday.

  2. this looks wonderful…i plan to try it with an all-purpose gluten free flour so we’ll see how it turns out. One quick question, though, about how long do you boil the chicken for? I’m assuming it takes quite awhile to cook a whole chicken.
