Nana’s Corn Salad Recipe: Fast Food for Slow Sundays

Nana fed this to us back over the Christmas holidays. It was so different – and delicious. And it had Fritos in it! Definitely an easy Fast Food for Slow Sundays addition. Either as a side dish or the main course! I hear it is adapted from a Paula Deen corn salad recipe.

 Corn Salad

Ingredients

  1. 2 cans whole kernel corn, drained
  2. 2 cups grated cheddar cheese
  3. 1 cup mayonnaise
  4. 1 cup green bell pepper, chopped
  5. 1/2 cup red onion, chopped
  6. 1 10 oz. bag Fritos Chili Cheese, crushed

Directions:

  1. Mix first five ingredients and chill.
  2. Stir in corn chips just before serving.
