There’s really no need for potato salad to be labor intensive. Don’t you agree?

About Hodgepodgemom

Tricia faces a daily dose of chaos homeschooling five children. The biggest lesson she’s learned? At the end of the day – when the dishes are put away and the children are tucked in bed – truly what matters is each child’s relationship with the Lord. Raising children is a God-given privilege and, folks, the time is short.

  1. Maggie Hogan says:

You have changed my life. Thank you. I miss my potato salad but just can’t manage it anymore. But this? This I can do!

  2. This is HUGE for me, thanks for posting! I am allergic to potatoes…okay only to peeling potatoes. It must be the mold or something but my hands break out into hives and I even have to use my inhaler after I dare to peel them. I have trained some kids to peel them, but they hate it. So their grumpy factor plus my allergies has resulted in no dishes that need any sort of peeling. This is great! Thanks!

    • Kacky – I love finding allergy-friendly alternatives!! That is wonderful to hear!! Last year I made a potato salad allergy-friendly for my egg allergic child. I did not add eggs – and rather than mayonnaise I used yogurt. It was delicious!!

  3. Yum…printing and filing for future use.
Thanks to you and Southern Plate for the recipe. :)
