A wonderful, very easy recipe was given to us by true south Georgian gentleman…a sort of “five fishes” type for limited leftovers.  It was his late mother’s concoction and promised to be delicious…

Southern Shrimp Salad

Ingredients

  1. Leftover boiled, cold shrimp (at least 6 or 8 shrimp)
  2. cooked and cooled pasta (your choice: elbow, angel hair, spaghetti…whatever you have)
  3. Mayonnaise (about 1/3 cup or as much as to your liking)
  4. cubed dill pickle relish, desired amount
  5. small jar of pimento, drained
  6. shredded cheddar cheese…about 1/2 cup

Instructions

  1. Mix together all ingredients.
  2. Add a little salt, pepper and maybe a shake or two of Old Bay Seasoning.

Cooking time: no cooking required
