Fast Food for Slow Sundays: Potato Soup

Talk about a perfectly easy recipe to make a large amount of and share on Sunday for lunch! Talk about frugal! Make potato soup on Friday or Saturday and warm it up for the masses. Or toss all the ingredients in the slow cooker and let it cook most of the day. I double it for our crowd. Because then we can have it for lunch on a week day as well. I usually use a whole bag of red or white potatoes.

Don’t let the long list of ingredients fool you. I’m a two or three ingredient gal myself. This is easy!

: Potato Soup
  1. 2 stalks celery, sliced
  2. 1 med. onion, chopped (or equiv. frozen chopped onion)
  3. 2 T margarine, melted
  4. 6 med potatoes, peeled and cubed
  5. 2 carrots, sliced
  6. 3 cups water
  7. 5 chicken bullion cubes (or chicken broth pulled from the freezer or one can chicken broth)
  8. 3/4 tsp seasoned salt
  9. 1/2 tsp dried thyme
  10. 1/2 tsp rosemary
  11. dash garlic, pepper
  12. 2 cups milk
  13. 1 cup shredded cheddar cheese

  1. Slow cooker: can skip cooking the celery and onion in butter.
  2. Put all but last two ingredients in crock pot. Cook on high 5-6 hrs or low 8-10 hrs.
  3. Mash vegetables until a smooth but a bit chunky texture.
  4. Add last two ingredients before serving.
  5. Stove top: Saute celery and onion in butter in large Dutch oven.
  6. Add next 9 ingredients.
  7. Cover and simmer about 20 minutes.
  8. Remove from heat, mash vegetables with potato masher.
  9. Add milk and cheese.
  10. Cook, stirring, until cheese is melted.

    I LOVE potato soup! We ate it quite a bit when I was a child, but I’ve only cooked it myself a couple of times. Sounds like a cool weather winner to me!
