Mamaw’s Cheese Salmon Loaf

I remember having salmon loaf growing up. I don’t think I realized then that it was my grandmother’s recipe. I surely didn’t know just how frugal the recipe is. And it wasn’t until I served it to my own family that I found out what a hit it would be. I expected them to make faces.

Flipping through the red and white checked I’m Writing My Own Cookbook, I landed on the few-ingredient Cheese Salmon Loaf. I omitted the egg, hoping it wouldn’t fall apart too terribly after being cooked. It didn’t!

I told them all what it was. I asked they just each at least try a couple of bites. They made faces. But they were happy faces! Here’s a sampling of responses:

  • “Mmmm. This is good! I’m having more!” ~ 14-year-old
  • “I really like this. Can we have it once a week?” ~ 12-year-old

“YUM! Can I have this on my birthday?!” ~ five-year-old

That one loaf went pretty quickly the first time we had it. So next time, I doubled it. Still, it’s affordable. One can of pink Alaskan salmon is $2.29. So to make two it’s just still $4.58 to feed the whole family. Throw in some baked potatoes and a can of green beans on the side and you’ve got yourself roughly a $5 Dinner!

: Mamaw’s Cheese Salmon Loaf

  1. 1 can salmon (I used pink)
  2. 1 1/4 cups grated cheddar cheese
  3. 1 egg, beaten (I omitted due to allergies and it didn’t fall apart)
  4. 1/2 cup evaporated milk, (regular milk ok)
  5. 1/2 tsp salt
  6. 1 cup bread crumbs
  7. 1 Tbs lemon juice

  1. Preheat oven to 350.
  2. Remove bones from canned salmon.
  3. Combine all ingredients.
  4. Place in a greased loaf pan.
  5. Bake at 350 for 30-35 minutes.

    Sounds great! This reminds me of my late mother in laws salmon cakes. I think I will make this next week. 🙂

    My mother-in-law makes salmon croquettes and salmon loaf. With the loaf she serves what she calls egg sauce. It’s s white gravy with boiled eggs in it. I thought it was so bizarre but now I enjoy it.
    She’s 81, maybe it’s a generational recipe? I aim to bring it back into vogue 🙂

      Definitely a generational thing. And it is very frugal! We’ve brought it back at our house. One of our children asked for it for birthday dinner 🙂 Enjoy, Natalie!

    My gran’s recipe called for 1 cup of cooked rice (instead of breadcrumbs), 1/4 cup minced celery and 1 tables lemon juice.
    My family – and my grandkids love it.

    Fond memories of my mother’s salmon loaf w/macaroni and cheese. She placed the salmon loaf mixture in the loaf pan, top it with prepared mac-n-cheese *Kraft boxed) and turn it out so the mac-n-cheese was on the bottom to serve. I still love it, but can’t find a recipe/instructions for it. Anyone heard of this? I was born in ’51
