Spinach and Fruit Salad: Arthritis Friendly Living

This salad is so simple. Just get your favorite bag of spinach. Top with any or all of the following:

  • shredded mozzarella
  • chopped fruit (apple, strawberry, mandarin oranges)
  • nuts (we use sunflower seeds to keep allergic children safe), avocado, your favorites!
  • Dressing (we use Italian)

I made this real quick for lunch after church. I chopped extra slices of apple for those that haven’t quite outgrown a spinach aversion.
