Squash – Microwave Variety

When you have some fresh, garden squash – or four or five from the produce section – you can make up some squash casserole.

Just wash, then slice up your squash. Add finely chopped onion – or larger slices of onion. Whatever your preference.

Put it all in a microwave-safe casserole dish. Add a splash of water.

Then, the secret ingredient, a spoonful of sugar. It makes the medicine go down and the squash even tastier.

Open the microwave and look for the directions inside the door for cooking fresh vegetables. Mine is Cook, 2, 3 cups. Microwave.

You may have to nuke it for two more minutes like I did. Then add a big pinch of shredded cheddar. Salt and pepper to taste.

Using your vegetable masher, squash that squash.

Then enjoy!

 

: Microwave Squash
  1. 4-5 squash, sliced thinly
  2. half a medium onion, sliced or chopped
  3. a splash of water
  4. 1 teaspoon sugar
  5. a pinch of shredded cheese
  6. salt & pepper, to taste
  1. Follow microwave directions for cooking.
  2. Stir well.
  3. Mash with vegetable masher and serve immediately.
