Easy Gluten Free Pumpkin Muffins Recipe

Each fall we welcome the season by making this easy gluten free pumpkin muffins recipe. The best thing is this recipe is just two ingredients. Years ago we used regular ingredients. But as our dietary needs changed, so did the ingredients. These are so easy to make I often find they are a Saturday morning staple. You might too.

*You can also make this very same recipe with a chocolate or spice cake mix. Vary it and see which version your family likes best.

Easy Gluten Free Pumpkin Muffins Recipe

: Easy Gluten Free Pumpkin Muffins Recipe

  1. 1 box gluten free cake mix (yellow or chocolate will do)
  2. 1 29 (1 lb) oz can of pumpkin
  3. 1 cup chocolate chips (optional but highly recommended)

  1. Mix together and bake according to cake box instructions for cupcakes.

Preparation time: 5 minute(s)

    Do you still use the liquid, oil, and or egg that the cake mix requires? Or does the pumpkin replace those ingredients?

      Hi Juanita – the pumpkin replaces all of those. It is just the two ingredients – cake mix and can of pumpkin!
